FOR MORE than 3,500 years the mummified stays of the Xiaohe other folks lay undisturbed in a wilderness cemetery in Xinjiang in western China. Then, in 1979, a crew of archaeologists were given their fingers on them. Some of the treasures they dug up have been mysterious white lumps strewn around the mummies’ necks: chunks of the oldest preserved cheese on the planet.
